Tasty Tuesday: Vegan Feast

Vegan FeastI’m not vegan but I do try to eat as much fruit and veggies as I can… not to mention I like to try new things (unless those new things are exotic meats and/or organ meats – eew).  This recipe looked so good, I just had to share.

Baked tomatoes: 3 large, ripe tomatoes, salt + pepper. 1 Preheat the oven to 225 degrees. Use a medium casserole dish. Cut the tomatoes in half and place them in the dish with cut side up. Salt and pepper slightly. Bake the tomatoes at 225 degrees for 30 min. 

Quinoa: 1 cup red (or visible light), 2 cups water, 1/2 teaspoon salt – Put everything in a saucepan and cook under cover for 20 minutes, low heat.

Fried potatoes: Cut some potatoes into chunks, boil until tender, strain. Bake until golden in a little oil. Salt and pepper lightly.

Paprika roasted chickpeas: Saute the chickpeas in a little olive oil until they begin to “jump”. Season with salt, pepper, and paprika seasoning.

You will also need:
1 package smoked tofu
tortillas smeared with vegan cream cheese, cut into triangles
3-4 scallions
1 avocado, chopped into chunks
one lime
green salad
soy yogurt

Assembly: Push the tomatoes to one corner of the form.
Arrange the remaining ingredients side by side.

Avocado dressing: Squeeze lime over avocado chunks, add a little salt and pepper. Add soy yogurt and ajvar on top. (tip: have extra ajvar and yogurt standing on the table too, so everyone can get as much as they want)
