Tasty Tuesday: Turkey Stuffed Peppers

Turkey Stuffed PeppersThis recipe is one that I modified from a recipe for ground beef stuffed peppers that I found online awhile ago. I prefer red or yellow bell peppers over the green ones and I also prefer ground turkey over ground beef, in both taste and for a leaner me.  Try it out and let me know what you think!

Serves 4

Ingredients:

2 large bell peppers (colors of your choice)
1 pound ground turkey
2 tbsp olive oil
1/4 cup chopped onion
1/2 cup chopped tomato
1 tbsp of chopped chives
Garlic salt and pepper, to taste
1/2 cup shredded cheese
1/4 cup shredded cheese

Directions:

Slice pepper in half and remove the seeds and stem. Fill a large pot about halfway with water and bring to a boil. Add all 4 peppers halves, boil for 3 minutes, then drain. Add olive oil to pan and begin sauteing the chopped onion. Add ground turkey, season, and cook until brown. Stir in chopped tomatoes and chives and cook until tomatoes are hot. Remove from the heat and stir in the 1/2 cup of shredded cheese. Put the pepper halves in a greased 8×8″ baking pan and fill them with the turkey filling. Sprinkle the 1/4 cup of shredded cheese on top and bake at 350º for 20-25 minutes. Serve with a light green salad or steamed veggies for a delicious meal!
