Tasty Tuesday: Almond Apple Spice Muffins

almond-muffinsAlong with taking my Skinny Fiber, I’ve been trying to follow Bob Harper’s Skinny Rules while eating a healthy diet and working out. Rule #9 is “no carbs after lunch” which can be a bit of a challenge. So, I’ve found adding a few low carb recipes to the mix help me stay a little sane when I have a craving. This recipe is from Shape Magazine and it’s a keeper! It’s low carb (only 10g per muffin), high protein, and low in sugar. Check it out!

Servings: 6 (2 muffins/serving)

Ingredients:
2 cups almond meal
5 scoops vanilla protein powder
4 whole eggs
1 cup unsweetened apple sauce
1/2 stick butter
1 tablespoon cinnamon
1 teaspoon all spice
1 teaspoon cloves

Directions:

Preheat oven to 350 degrees. Melt butter in microwave (~30 seconds on low heat). Thoroughly mix all the ingredients in a bowl. Spray muffin tin with non-stick cooking spray or use cup cake liners. Pour mix into muffin tins, make sure not to over fill (~3/4 full); this should make 12 muffins (2 muffin trays). Place one tray in the oven and cook for 12 minutes. Make sure not to overcook as the muffins will become very dry. Once cooked, remove from the oven and cook the second muffin tray.
