TASTY TUESDAY IS BACK and we’re going Paleo :)

After our recent posts on the Paleo Diet and the launch of our new Going Paleo Starter Kit this month, I wanted share some recipes to show you just how yummy this lifestyle can be. Since I love Mexican food (to a fault, to be honest), I thought I’d share this recipe from DrizzleandDip.com.

Lettuce ‘tacos’ with Chipotle Chicken

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Serving Size: 4


  • 400g of skinless chicken breast cut into fairly thin strips
  • splash of olive oil to fry these in
  • 1 x red onion finely sliced
  • 1 x 400g tin of tomatoes (whole or chopped)
  • 1 T of finely chopped chipotle in adobo sauce (or substitute with finely chopped pickled jalapeno chillis and a pinch of dried chilli flakes)
  • 1/2 t cumin
  • pinch of brown sugar and salt and pepper to season
  • lettuce leaves to make your tacos (I like to use butter lettuce or baby gem lettuce)
  • fresh coriander leaves
  • sliced pickled jalapeno chillies
  • slices of avocado or make guacamole
  • fresh tomatoes and slices of spring onion to make a rustic salsa – as much as you need. I used about 2 cups of quartered rosa / cherry tomatoes and sliced red spring onions / scallions. I tossed these together with lots of salt and pepper.
  • lime wedges to spritz

What is the Paleo Diet and Why is It Good for Me?

#1 – What is the Paleo Diet?

Your ancestors who lived in the Paleolithic era roamed the earth about 15,000 years ago. One of the most important strides humans made at this time was the development of the very first stone tools. Obviously, those human beings had a drastically different diet than the unhealthy Standard American Diet (SAD) eaten by most modern-day societies.

They only ate natural foods.


They ate whatever they could get their hands on, which predominantly meant fish, meat, seeds, vegetables and some occasional fruits. There was no pollution in the air. There were no impurities and garbage being pumped into natural water supplies. The animals and plants during the Paleolithic era were natural products.

They made up the diet of humans, and other carnivores living at that time.

Because of this, your cave dwelling predecessors were extremely healthy, both physically and mentally. Since the way that your body processes foods, and the way it works internally and externally, has not changed significantly since the Paleolithic era, adhering to that type of diet can offer you the same wonderful health rewards.

image002Guess what? You may have a much more comfortable living environment then your paleo ancestors did, but they were much healthier than you are.
